I am deeply interested in the Tudor period. This is as fine a “goodwife” costume as I have ever seen. Clothes of merchants & farmers were rarely portrayed in paintings of the period, but this has an authentic feel. You probably already know, goodwife was the term for a female head of household.)

It’s actually kinda rewarding to make it from scratch. (Or well, not so scratchy, as I used store-bought breadcrumbs and chicken broth instead of stock).

And now, and now, we have reached halftime! Dressing comes out of the oven for another small rain of chicken broth (yes, shouldda used stock, but they didn’t have it at the local grocery store, and so we must needs make do).
A lovely pan of baked turkey dreading is at its halfway point.

Now we pause and wait, and turn our thoughts elsewhere. The baking is happening!

The onion-celery-herb mixture and the breadcrumbs have met and married. They are now consummating their relationship in the oven. Since I am baking the dressing outside the bird (only cooking a turkey breast this Thanksgiving) I added a little chicken broth before the pan went into the oven.
A roasting pan full of uncooked dressing waits, ready for the oven.
