I think they conflated self-checkout with normal checkout in that sentence.

Self-checkout automates away jobs entirely. One attendant now looking after 10+ self-checkout machines.

Normal checkout is assisted by barcode scanning + automated calculations so a cashier doesn’t need to know basic math.
