Some of the best food I have eaten has been rustic fare in the wilds of Spain, Portugal and France. If the basic ingredients are good, no need for frills, eh? I'll never forget my first encounter with Wildschweinragoût in the Black Forest... incredible.

Yes, I prefer to bake the stuffing separately. I like it crunchy, I roll it into golf-size balls. Leeks make an interesting alternative to celery. And I prefer olive oil to butter, but we're generally on the same songsheet here.

Really, all cuisine styles done well are good. I think the biggest compliment I ever got was when a group of Malaysian guests told me a rendang I'd made for an Eid-ul-Fitr party was the best they'd ever tasted 😳. Made my year (and I'd worked on the dish for three days). I'd been nervous, obviously

After a while, though, I opted for medieval-recipe spiced beef rather than turkey. Latterly, baked carp or zander is my Xmas choice. Both of which (typical me!) are hard to find in London. And goose costs a fortune. But Portuguese salt bacalhau works for me too.

We'll see. Right, how do you make your stuffing for the not-so-thankful turkey? I cooked turkey a few times for Xmas in years past, I preferred using loads of garlic to help counter the bland taste of the bird itself. And whole peeled red onions in the cavity as the turkey slow-cooked 'upside down'.

Had to research what thanksgiving actually is (sorry). I thought it was a yank thing involving reprieved turkeys, had no idea it is celebrated in Canada too 🤪. Live and learn, eh? Enjoy the festivities.

Obviously this begs the question: why is my lower left leg currently 50% larger in circumference than the right one? I suspect an infection of some sort. But it’s not even really painful.

Sorry to hear this. Must admit I found the ‘AAA’ dept. surprisingly efficient, I was blood tested, scanned and ‘assessed’ in less than 3 hours. At least I now know I don’t have DVT…

Erm, I don’t even know what thanksgiving is about? We don’t have it in Europe. It involves dead turkeys? And pardoning them for existing? To us it’s an obscure yank thing, do you have it in Canada too?
