Me: *Sits down to write*
Brain: "wut r wurds?"
Me: *Taking out the garbage*
Brain: "Here's how everything fits together to form the greatest saga of epic fantasy novels ever written!"
Me: *Trying to get to sleep*
Brain: "Here's some complex character motivations that will make your characters come alive!"
Me: *Walking down the street*
Brain: "Here's some great dialogue ideas!"
Me: *Goes to the toilet*
Brain: "Here's some great character development!"

Most stories fit the structure not because they were intentionally planned that way, but because as we develop stories, they naturally form that kind of structure. It's descriptive, not prescriptive.
I think a three act structure (or any variation thereof; I use a 4 act structure myself) is a useful tool for analysing work, not necessarily as a tool for creating the work. If you are having trouble, you can use it to find where the problems are.
