🍜 Chickpea Maafe ( #vegetarian West African groundnut stew) over an authentic West African recipe rice. I usually make this dish with goat, lamb or chicken and stir in cooked leafy greens such as amaranth. (This was still spicy and delicious without the meat and leafy greens.)
