as nice as NixOS is I don't know if it would really be good on a NAS environment, personally I like running VMs and containers on a machine as the primary focus, although docker exists so ¯\_(ツ)_/¯

I primarily use plex, I have Plex pass lifetime. Jellyfin I use for audio/ebooks and manga primarily with my VPN. Also just a backup in case Plex breaks and the internet is dead so I can continue to access my media on the big screen.

i'd do proxmox then run nextcloud in a container if you want a homelab, i did just ubuntu with just plex initially, but later scaled and proxmox helped, running home assistant, unbound, jellyfin, NAS and more on the same machine
