๐Ÿ” Dairy and meat dominated the research themes for 2025

๐Ÿซ› Soy and peas were the most researched ingredients

๐Ÿ“ˆ Emerging trend: functional & non-alcoholic plant-based beverages gaining momentum.

Q1 2025 #Plant-Based Sensory Research:

๐Ÿ‡บ๐Ÿ‡ธ US publications increased 400% compared to Q1 2024. ~30% of studies focused on consumer perception.

โš™๏ธ Sector: Processing & Formulation

๐Ÿ‡จ๐Ÿ‡ณ China saw a 33% increase in novel publications vs. 2024.

๐ŸŒฑ Key research trends include 'rheology' and 'high-moisture extrusion' for food texture, alongside increased focus on bioactive compounds for nutrition and health
A) Publications stats in #cellag by ingredient type

B) Compared to 2021, in the food tech sector, the number of published research papers in CM increased by ~200% and ~70% for PF/R.

Cultivated Meat Q1 2025 publications: Research models

๐Ÿ„ Studies using bovine cell lines were the highest (9 publications), followed by pig ๐Ÿ– (7) and mouse ๐Ÿ (4)

๐Ÿ”ฌ Of the different cell types, satellite cells were the most researched (7), followed by myoblasts (6)
๐Ÿซง PF is an established tech for enzyme production, however, it is still considered an emerging category in the food & deep tech realm.

โš ๏ธ Thus, keyword searches for 'precision fermentation' yield limited results. Broadening search terms can further improve its research landscape analysis.
Of which, research themes included strain and protein expression efficiency, organoleptic advancements and a critique on the safety of PF products

Precision Fermentation Q1 publications 2025:

Compared to 2024, there has been a 120% in the keyword 'precision fermentation' in Pubmed searches.

2025 publications are mostly review papers (7 out of 9) with two papers released from the US and Netherlands ๐Ÿ‡บ๐Ÿ‡ธ๐Ÿ‡ณ๐Ÿ‡ฑ

2025: GRAS-certified Nattokinase, a Bacillus subtilis byproduct, was used as a cell dissociation enzyme for bovine and human cells in culture media. It performed comparably to animal-derived trypsin - at a fraction of the cost.

#CultivatedMeat Q1 2025 vs Q1 2024 publications:

Increase in cell media studies, โฌ†๏ธ by 133%

~36% of cell media papers were researched in S. Korea ๐Ÿ‡ฐ๐Ÿ‡ท
Q1 2025 Cultivated Meat publication findings:

Total no. of publications went from 27 (Q1 2024) to 46 (Q1 2025), a 70% increase

Novel technical research publications went from 15 to 22, a 46% increase

S. Korea published the most technical papers in 2025 (13), followed by China (7) and the US (4)
A 15-40% inclusion rate seems safe for this study. Researchers indicate future work to cover:

- Testing different dog breeds (not just beagles)

- Investigating short-chain fatty acid production & its role in gut health

- Exploring global serum & fecal metabolite changes

๐Ÿ•๐Ÿฆฎ๐Ÿฉ๐Ÿ•โ€๐Ÿฆบ
- Fibre intake was increased that likely led to lower fat digestibility

- Protein & energy digestibility remained unchanged

- Fecal scores & pH changes suggest higher fiber content, leading to slightly softer stools (yeast based diet)

๐Ÿ’ฉ
- Whole blood taurine was lower in test groups but remained above the critical threshold (150 nmol/mL)

- Researchers link this finding to prior studies showing that lamb-based diets naturally lower taurine

๐Ÿฆด
- Liver health marker ALT (alanine aminotransferase) increased in some dogs, but this was likely linked to medications and not the test ingredient

- Cholesterol levels were lowered in 40% test ingredient cohort
