Rewind to beginning: If you want to eat the meat of the whole chicken 🐓 you should take the breast out after 15 minutes, from the start. Store in fridge until you want to make soups. Can make a good thai 🇹🇭 soup 🍲 and a couple others. Will go through this winter ❄️
Also I add shiitake mushrooms 🍄‍🟫 as many as you like. Maitake too
Do this then throw into the stock and simmer for 1-2 hours
One trick for the soup 🍲 is to roast the drumsticks 🍗 and wings. Put them in the oven at 175 degrees Celsius. for 25-35 minutes. This will add a stronger and deeper flavor to the stock. Bones & skin is where the flavor comes from most
You can freeze 🥶 it too. It’s really a useful tool for cooking 🥘
Average cook time is 2-3 days, though. If you want more complex broths, then it needs a week at least. As long as you bring it to a boil each day, you can use the broth if you store it in the fridge overnight each night.
I like it to be extra broth-y so I usually cook it for days sometimes weeks

20 minutes more and I put the parsley 🌿 and thyme then reload the carrots 🥕 🧅 and celery
20 minutes. Take the white proteins out to keep it as clear as possible
Ease up to a boil, then simmer down, to a simmer. Simmer as long as you want to simmer above 2 hours. You can try it at 2 hours, then if it doesn’t suit your taste, put it on for another hour or two. The more you simmer, the more complex the taste will get
Wash chicken (only H2O), put in pot, then put in all the ingredients stated above. Cut them in big pieces. Add an onion if you like with the skin on (I much prefer...has a couple benefits).. Afterward, put cold water leaving a couple inches of space at the top.
The recipe: The base of the base: Celery, carrots, onions, and clove of garlic make up the base of any chicken bone broth I make. Standard method.
