FINALLY figured out how to uninstall Copilot from Microsoft apps!
• Go to m365.cloud.microsoft/apps/
• In the "Use across Teams, Outlook, and Microsoft 365 Copilot," hover over Copilot and click the three dots on the right
• Click "uninstall"
• Quit and re-open your Microsoft stuff
• Voila!
