I think the main reason for this is that it would suck the fun out in the developer's view-see also Fallout's energy weapons only occasionally making piles of ash and goo.
Personally, I think it's a crucial thing *to* show.

it's not reflected in the games itself but halo lore REALLY likes to emphasize the brutality of directed energy weapons. basically every book has some poor marine turned into a bubbling exploded mess

It's funny how laser weapons in sci-fi are associated with "kids' shows" because of the way a lot of media historically used them as an excuse to avoid blood and gore, when the reality is that a pulse laser weapon used on a human being would be almost unbelievably gory
