Since it’s the season, favorite soup/stew? Here’s mine!
Curried Sweet Potato and Red Lentil Soup From "Spilling the Beans" by Julie van Rosendaal & Sue Duncan • 1 lg. onion, chopped • 1 T olive oil 2-3 cloves garlic, crushed • 1 T grated fresh ginger, finely grated • ¾c. red lentils, rinsed and drained • 1 med sweet potato, peeled and cut into large chunks (or butternut squash, peeled and chunked) • 3 carrots, peeled and chopped • 2 tsp. curry powder • 4 c. vegetable or chicken broth (unsalted) • 1 c. water • 1-1/2 tsp. salt • 1 can coconut milk Saute the onion in the oil until soft. Add the garlic, ginger and curry powder and cook an additional min to bloom. Add remaining ingredients EXCEPT the coconut milk. Bring to a simmer and cook 45 min to an hour, or until the lentils are soft and break down. Puree with an immersion blender. Stir in coconut milk. Gently reheat. Serve with a spinach salad and crusty bread, or wilt a few large handfuls of spinach, divide into bowls and serve the hot soup over top. Swirl spinach into soup. Soup freezes well. Makes ~8 1C servings
