If the purpose of education is to prepare learners to apply skills and knowledge outside the classroom, then the tools and processes we learn and focus on should be those that are ACTUALLY USED outside the classroom, i.e. in the workplace.

Absolutely, and that's why open source models exist, but even some people are saying that those are using copyrighted works (the collection was open-source, but some materials inside it were copyrighted)

The values are used to train the model about context, syntax, etc. They are never used to recreate copyrighted materials verbatim. A translation should be concept-by-concept identical, unless you're 1899 Sweden
