A story Stoppard told several times, in several places:
"Years and years ago, there was a production of The Tempest, out of doors, at an Oxford college on a lawn, which was the stage, and the lawn went back towards the lake in the grounds of the college, and the play began in natural light. But as it developed, and as it became time for Ariel to say his farewell to the world of The Tempest, the evening had started to close in and there was some artificial lighting coming on. And as Ariel uttered his last speech, he turned and he ran across the grass, and he got to the edge of the lake and he just kept running across the top of the water — the producer having thoughtfully provided a kind of walkway an inch beneath the water. And here’s Pear Crisp with a Twist. looking at the ingredients, I expected this one to be way harder, but it wasn’t. note the very useful instructions on Pear Chunk Size, which turned out very well for me & I intend to use in future.

Here’s the recipe for “Perfecting Pear Crisp”, as well as Keith’s notes about steps he takes to reduce the issues I grappled with. I don’t doubt that his recipe is an improvement on some of this!
a bunch of writing about pear crisp. in my opinion the relevant bit is “using ripe yet firm Bartlett pears reduced the wateriness”. did it? this is a pear crisp recipe. let me see if I can find a way to alt text the whole thing later. the relevant parts are “we like to use Bartlett pears for this crisp, but Bosc pears can also be used”, “3 pounds ripe but firm pears, peeled, halved, cored, each half quartered lengthwise, and each quarter cut in half crosswise” and “preheat oven to 425 degrees”.
