Actual rice noodles are almost always GF, but you can't really substitute them for wheat noodles. Unfortunately, I've never found a satisfactory GF wheat substitute noodle.

Oh gosh, SO many sinus infections. Months of continuous steroid use in my early 20s to try to knock out a series of them probably didn't do me any favors, either.
Sucks that your dad's had to deal with the constant threat of sinus infections, too. Not a fan!
