3. Home made is the best; it’s an easy & enjoyable cake to make. The only place to get a really good bought Christmas cake here in the US would be from a Caribbean bakery/caterer — delicious!!

2. For a Christmas table, icing & marzipan are nice. We always had a decorated cake. But I’m just as happy with a plain cake — especially paired with a slice of strong cheese. Great with a cup of tea or something stronger …

1. Fruit cakes are delicious, but too often get a bad reputation here, perhaps because the commercial ones are too dry, and poorly flavoured. Ideally a fruit cake should be made well ahead of time, and should be infused with a spirit — I prefer rum, but brandy, whiskey etc are popular.

Thanks. Over a decade ago I became obsessed with Sperr’s NYC photographs, & couldn’t understand how little he seemed to be recognized. I found some biographical info about him, but not as much as I’d hoped. Am glad to see he’s got more attention in recent years. Still dreaming of a Sperr exhibition!
