The USDA recommends an internal temperature of 165°F for poultry, but it doesn't need to stay at that temperature for long.

Stay safe and use a meat thermometer 🌡to monitor internal temperature. Cook the bird until the breast reaches at least 150°F and the thigh reaches at least 165°F. The carryover cooking will raise the temperature further during resting.

The thermodynamic advantage is particularly evident when cooking at higher temperatures (450°F), which you should for a spatchcocked turkey, and can reduce cooking time by up to 75% (to as little as 80 min).

It's run by a passionate NIH trainee who came from a rural community where students didn't have access to a lot of resources and rarely considered going to college. I hope you'll consider sharing and supporting this great program.

The program has been running since 2020 and has already matched >390 mentees with an extensive “mentor alumni” network comprised of many past and present NIH postbaccs, grad students, clinical fellows, postdocs, etc.
