I started spatchcocking last year and like it. I'm just using a dry brine. I've never tried injecting. For today's crowd, pedestrian is better. At home, I would like to try (to dance) a Cajun (rhythm) spice injection.

I'm using gas since I'm not on my home grill(s). But it will do.

Plus they make excellent wives for firefighters who can't find nurses. 🤣
Both of my grandmothers and my MiL were all teachers. Huge respect. I'm dead after a week of teaching, and they did it for 30+ years.

I've been thinking about the build it myself option. I've never done that, but I'm sure I could figure it out. A lot of the pre-built ones aren't available with an optical drive, which I still use fairly frequently. I guess I could always add a stand alone.

Yes, that's definitely a discussion piece. I think I saw the words "stay in your lane" used. There's something to be said for that, but also a balance of if they won't fund it no one will.

I saw the article and skimmed it. I think the gist is that as a private company they can't get a public safety exemption, so they sold it to a public safety agency.
