Honestly, the gravy might be the best food item that I’ve ever made my entire life. Seared the giblets, neck, and back strap, set those aside and sautéed mirepoix in the turkey fat, then added some water and herbs and spices and the meat back in and simmered for five hours.

Seventh heaven—even though I had to move to the floor right after this cause my sciatica became way too much. At least I was able to get it all done. Just had to take a five minute lay down break every 15 to 20 minutes. All fucking day.
Still sooooo worth it.
