They are "old tech" in that expanding fluid to cool it has been around for a while, but new plants sometimes use them if there's no convenient body of water to use as a heat sink.

The cheese was good, but the gravy made the fries kind of soggy which kind of defeats the purpose of fries. If it has just been crispy fries with cheese curds, that would've been much better. Maybe with a side of mayo for dipping 😍
