Those resistors between the max485 and then uC can be omitted. Separate control of receive enable can be useful for collision control and verifying transmitted data if you have extra pins.

ESP32 isn’t open source, aside from some of the toolchain. And even though the RV ISA is open, most of the actual CPUs are not.

That being said, there are FPGA-based projects like this with open hardware
