I've always personally wanted space travel in games to be down time living on the ship interacting with crew and the interior environment, making repairs etc before making the decision to warp to the place I'm getting to.

You used to be able to buy individual die-cast models, though I'm not sure you can do that any more. Last time I saw them was in a hobby shop in the UK like 20 years ago!
