It’s likely these coaches get another job so the payout rarely materializes (see the James Franklin Penn State situation for an example), but these are like a MLB contracts in that they’re guaranteed. I think LSU hurt themselves by trying to get out of paying the coach they fired. What coach would want to go there given that? It’s just the cost of doing college football business these days.
