I think maybe don’t curve the line down the middle so much? But if you’d really like to understand the structures in the head, look at references of skulls and practice drawing those before adding the face on top. You can also look up “human face planes reference”

You could try intentionally limiting your layers for a small exercise? when I paint i use only one or (on occasion) 2, but also it’s not for everyone lol. my sister uses upwards of 15 layers when drawing characters & her stuff is fire. Just try to keep your work layers well organized :)
