Finally made the pasta and it was ridiculously good. I sautéed 4c of diced yellow squash, half diced onion, 2 garlic cloves until it started to brown. Blended it w/1/3 block cream cheese, 1/2c milk, 1/2c cheddar & 3 tbsp parmesan. Blended it together. Topped w/garlic parm breadcrumbs. 😍🍽️😊

Was planning to dry some herbs and thought I could incorporate it into Halloween decor. Found a stick in the yard and picked a bunch of stuff from the garden. Forgive the bright lights. It was impossible to get a good picture. But I’m obsessed. 🧙‍♀️🎃🌱

Enchiladas are the oven! Just added broth to the leftover beef & venison chili, dipped the corn tortillas then rolled and topped with chili and cheese. Took 10 mins. Love that kind of leftovers redo dish. 😍🍽️🍜

On the pasta, I’m gonna roast the veggies then blend them together with some cream cheese. I’ll keep back some of the veggies to toss into the pasta whole too. I’ve got shredded chicken so maybe that goes in as well? Experimenting to use up all this squash 😀

Cooking today 😊. I’ve got leftover chili and corn tortillas that I’m going to make into chili and cheese enchiladas for lunch. For dinner, I’m experimenting with a creamy pasta sauce with a roasted squash, garlic and onion blended base. Trying to prep a bunch on my day off to get ahead this week. 🍜🍽️

Gameday dinner is buffalo chicken sandwich with garden veggie slaw and sweet potato fries 😍🍽️🍜
