I have used two different ideas - for standard brioche or croissant - tangzhong with 20% milk and 4% flour, bring the heat up on the milk until it solidifies. For challah (non-diary) I use yudane with 10% (boiling) water and 10% flour. For both working increasing liquid content of the dough.
