These batards ended up looking pretty good. They are 80% AP, 20% KA’s formerly known as stoneground, 15% seeds (KA mix), 74% water, 10% Lite Salt (low sodium salt mixture from Mortons), 50% mother (90% water). Baked at 490F with steam for 10min and 15 min without steam. #sourdough #breadsky #bakesky

I have been baking croissants for a year or so now. They are pretty good. Not perfect but pretty good. The secret is to have plenty of liquid (milk, eggs) in the dough, but not too much liquid. (1/n)
