It’s on the reel (at 9s on the countdown)! Added for creaminess, but the texture and flavour are surprising. What’s more, we don’t use them in the Puglia Kitchen like this - and not even for pasta. They were considered a luxury, to be sold rather than used!

We spent some time learning about the Calabria Kitchen. They use an ingredient that is missing from our Puglia Kitchen - and we have to say, added to pasta, it’s a revelation!

Grazie. Here too, although we don’t have USA additional cost challenges you mention. Average #EVOO prices at origin in #Italy - €944,5 per quintal at start of 2025 were more than double those in Spain - €440,2 per quintal. cf. Greece €468,5 per quintal.

As for EVO blended with olive oil…
