(I grew up in a small NJ diner/lunch counter type place, at the end of one of the NYC commuter train lines. Our breakfast rush started with the train staff at 4AM.)

Part of the reason it's so popular is that's almost exactly how long an egg takes to cook on the grill, so you're not standing around waiting for the bacon to cook -- even during breakfast rush you can get people out the door in under five minutes from order!

The whole point of Taylor ham is that places slice it super thin (and then cut slits in the sides so it doesn't curl up) and fry it on the commercial griddle just long enough to heat through and brown it slightly
