This is a salsa with just jalapeños (from the garden), garlic, and salt.

No acid (lime juice) - instead it will sit for a few days to ferment, which will give it a nice tang AND be very gut friendly.

Love your gut.

Feed it fermented foods.

Poblano peppers are roasted and seeds removed. I'll IQF them to be stuffed with oxaca and cojita cheeses later, then baked in enchilada sauce made with dried pasillas, guajillos, and anchos from the garden.
