I always make baked pasta, but today it's... Baked gnocchi! 🤤 Plenty onion, garlic, basil, diced #vegan sausage, tomato sauce & lots of gnocchi, topped with some cheeze 🌱 and baked. Absolutely delicious 👌🏻 Some plain cooked broccoli 🥦 for even more veggies! 😉

Today's dinner: my take on Greek spanakopita 😋 Mixed firm & silken tofu with fried onions, garlic & spinach. Turned out absolutely delicious 🌱 My snail shape is not perfect - that's due to me being very generous with the filling 🤭 but I really wanted to pack it with that tofu spinach mix! 🤤

Last night's dinner: Polish potato pancakes, topper with mushroom sauce & crispy tofu 🌱 Simple & absolutely delicious 😋 Was craving potato pancakes for a while now! It's my childhood favourite, my Dad used to eat them simply sprinkled with some sugar, that's it. How I miss him 💔
