There's one, it's called Mirror Modeling and you can find it with the other tools at the top of the main viewport. The icon is a cross with two horizontal lines.
I don't really remember when it was added, so it's possible the tutorial you watch may have been too old to showcase it.

It depend on what your goals and preferences are, but doing 3d lowpoly models is very much doable with Blockbench, even if it was first made with Minecraft in mind.
And nearly all my models are done in the Bedrock Entity format, so it's all cubes by nature (I kinda like the challenge it creates).
