The snow has begun and it’s already sticking to everything. Hoping for the low end of the estimated total. It’s not supposed to be a lot but we have somewhere to be today.

Back during the lead up to Thanksgiving, we were given a turkey breast. I put it into the freezer for a future turkey feast. Today is that day! Bird is in the oven getting all deliciousified. #dinner

It smells amazing in here! The other week, I took advantage of the 5/$1 plantain deal that ShopRite was running. And in about 15 minutes, Brian and I will be eating the Pastelón de Plátano Maduro (Dominican pastelón) that I made. 😊

2.5 hours later and I have pre-prepped everything for tonight’s NYE #dinner, which I now realize I haven’t told you all what I am making! 🙀 I’m making a Thai fusion dish: Nam Prik Ong Lasagna, which was created by the owner of a restaurant called Anajak Thai.

I just made a really yummy bean dish for #dinner. There was poblanos, red bell peppers, pinto beans, tomatillo salsa, cilantro stems, and Jack cheese. Garnished with cilantro leaves and a squeeze of lime.
