After a hiatus due to some gut irritation, I’m back to my giant plant milk morning lattes, accompanied by a green smoothie using Earth Chimp protein powder.
Saturday morning project - plant-based pastitsio. This recipe makes a lot. I’ll freeze some for future meals.

The kitchen remodel gives me so much more workspace, for which I am grateful.
Plant-based Santa Fe Rice and Beans and a sweet potato and black bean quesadilla.
Orecchiette topped with Heyday Kimchi Navy Beans, wilted baby spinach, and artichoke hearts and topped with help hearts - plant-based one pan dinner.
Savory breakfast bowls to power us through the morning. Steel cut oats, topped with steamed broccoli and topped with scrambled silken tofu. We added a sprinkle of za’atar seasoning and a tiny drizzle of Bachan’s Miso BBQ sauce.
Southwestern butternut squash and brown rice enchiladas with potato-based faux cheese sauce.
PlantStrong pancake milk, combined with canned beets, an apple, a ripe banana and almond milk and blended in a high speed blender until smooth = instant pink pancake batter!

Delicious, nutritious, and you can’t taste the beets.
It’s my hubs’ birthday. I’ve made him pistachio-studded black bean brownies with date chocolate chips for an indulgent dessert.
Banana Chocolate Chip Quinoa Breakfast Bake makes 6 servings - enough to bake it on the weekend and still have leftovers for additional breakfasts during the week.

I used the new vegan chocolate chips from Just Date. They taste like the real thing, but they’re a lot better for your health.

Morning Glory Muffins are on the menu in the Cheap Veggie kitchen.

I made these plant-based by using flax eggs (1 tablespoon flax meal to 2 1/2 tablespoons of water) for each egg needed.
2/2 I also skipped the lemon juice and instead added 1/2 cup of dry white wine to the lentil sauce, simmering a little longer to cook it off. Next time I might add a little bulgur to the lentil sauce.

I sprinkled the dish with a small amount of vegan Parmesan before baking.
1/2 I upped the cinnamon and nutmeg to 3/4 teaspoons, and added 3/4 teaspoons of all spice. I also added 1 tablespoon of miso to the lentil sauce for umami.

I have an old meat-based recipe of this dish, and I’ve been missing it. This version needed the spices kicked up a bit. I’ll also make notes in the comments on how I edited the recipe. This recipe serves 10 people!
A savory bowl for Sunday brunch - grits, topped with steamed greens and scrambled tofu. I add turmeric and smoked paprika to my tofu scramble, and top with a bit of za’atar seasoning.
Vegan “Meat” Loaf, baked potato, and greens for a leisurely Saturday night dinner.

This loaf has cannellini and kidney beans, rolled oats, and lots of sautéed veggies and seasonings. Drizzled with a bit of BBQ sauce, this loaf is comfort food!
