No butter, no fat, so shaping was hard. Ended up with navel-shaped bagels 😂, and the light purple is from purple sweet potato powder. Love that the bagels puff up after boiling.

No butter, no fat, so shaping was hard. Ended up with navel-shaped bagels 😂, and the light purple is from purple sweet potato powder. Love that the bagels puff up after boiling.

曾以為做麵包跟維持健康飲食衝突，畢竟是精緻澱粉，但使用全麥粉/減油減糖，身材沒有變，反而成為有氧後的方便補給。

Simple same day, 100% AP flour, 72% hydration loaf. Crumb texture is light and airy, crust is shatteringly thin. Still working on my shaping and think I could use a bit smaller banneton, but this is the closest to perfect I’ve baked. #sourdough #breadsky #bakingsky
