For payment, you might want to add an option for a deposit up front, with either scheduled payments to follow or the balance upon completion.

But that's coming from someone who mainly hires artists to illustrate comics I intend to publish, so maybe expectations are different.

Plenty of small publishers aren't just open to this, but insist creators sign a contact including a clause against using AI to write, edit, or illustrate a book.
