Or maybe I just rot and order a pizza instead.
Needing some comfort food tonight, so threw some of my pre-marinated pork that I keep in the freezer into the Instant Pot so I can have some carnitas tacos for dinner.

And… just got news that my grandmother passed away. She had a bad fall on Saturday and declined quickly after that.
My dad and uncle are dicks are haven’t let us see or talk to her in years, but I did manage to get a few letters to her through her old neighbor.
Love you and miss you, Grandma.

My brain is being dumb tonight, so I’m hanging out with Frey & Mr. Pieces (who expeditiously left his father’s room as soon as he heard me come out here) out on the couch while grinding some samurai levels in Final Fantasy Tactics: The Ivalice Chronicles.

Well, beans didn’t finish in time, so added some muenster cheese to the pasta and a drizzle of pumpkin seed oil over the top. Still delish!
Also added a sliced banana pepper and some sliced sweet onion to the chard sauté and served that over a schmear of the yogurt, which was super-tasty.

I’m craving veggies, so tonight I’m making: Veggie rotini with a woodland forage sauce (chards, mushrooms, walnuts, garlic, shallots, & nutritional yeast), Greek yogurt, and navy beans. Served up with sautéed red chard, sliced avocado, and some homemade lacto fermented red onions.

Every church denying aid to those in need right now need to lose their tax-exempt status.
If they’re not willing to step up and help the communities they’re in, UNCONDITIONALLY, then they should be paying their fair share like the rest of us (minus the rich elite) do.
