As someone who has often been in that boat but also is now a manager: that seems like a management/resourcing issue not a you problem. And don’t forget that you can use sick time for mental health reasons, not just physical health ones.

I've been told at least twice that I cannot use Vacation in lieu of sick leave (I've used a lot of mental health days this year). Well. That's not what Hr says. So shove it.
