I actually LOVE gouache dried! Mostly cause I carry them around like this for travel sketching, and like you said, I start with watercolor-y layers and then slowly shift to more opaque gouache-y stuff.
My secret ingredient: A single fresh paint, usually Permanent White, to mix my dried gouache with

I've actually never tried acryla gouache, though I've heard (and seen!) only good things! I paint mostly in acrylics but often like to add matte mediums for that final finish :) And I've never tried jelly gouache, either, so really, you've experimented more! Mine are just used like opaque watercolor

Oh, I never even thought about using a mirror!
The white cardboard has been amazing for me, as my light is pretty directional even at the best time of day, so it makes the shadows much less noticeable, and the colors look more vibrant!

It's a large window where I get indirect light that's great for pictures around 10-11 am only 😆 and I use a large piece of white cardboard as a reflector!
