When I feel overwhelmed by cooking (it doesn't happen too often for me, to be fair), I gravitate toward things like dump-and-bake casserole, soup, curries with rice, stuff on bread, stuff on sweet potatoes, etc. It doesn't have to be hard!
But in winter, I'd gravitate more toward hot drinks, like atole, steamers, hot cocoa, etc. You can make some really substantial hot drinks. It's hard (for me) to start a day with a cold smoothie in cold weather.
Smoothies are delicious! I like trying different combinations, but a good basic smoothie recipe for me is often soy milk + cashew butter + frozen banana + some other frozen fruit of choice +vanilla + cinnamon. That never fails me. You can try fancier things if you want variety.
They taste like a soft, sugary candy--it's kind of similar to marzipan, but without the almond flavor.
It's mellowcreme. Candy corn and mellowcreme pumpkins both use the same base. The difference is in texture, because the candy corn has a greater surface area to candy ratio. The candy corn is firmer overall.

The vegan ones are a bit softer and chewier than I recall the omnivore version being.
My favorite way to cook with eggplant is to make baba ganoush. Another great way is to put eggplant in African peanut stew, or to make Chinese-style eggplant & garlic. Just be sure you cook it long enough. Eggplant takes longer than most veggies and that's why a lot of people don't care for it.
Are you avoiding cake because you need vegan cake, or are you avoiding cake because you need to avoid cake? If you need vegan cake, there are very easy ways to make your own!
Great to know! Incidentally, I ordered more for myself a while ago and it finally arrived today. I find it gets better as it ages--it's a bit chewy when it's fresh, but it gets that wonderful mellowcreme texture with time.

But it seems like they say it's vegan, and people say it tastes like the original Beyond Chicken (the kind that was shaped like French fries), and if ever I find anything like that again I will cry tears of joy.
After some internet research, it seems that yes, it's new, and yes, it's not available where I am, but also, it is not mentioned at all on the Just website. Also I fell down quite a rabbit hole about their "natural chicken flavor" in the ingredients list and I'm still confused.
