Millions of squash/ pumpkins are thrown away, whilst food banks, overwhelmed by the seasonal focus, lack capacity to accept them. This is a missed opportunity for food security: they can last for 3-6 months.

Here’s the recipe for the popular "Pay What You Can" Soup we served at Daynes Farm's Pumpkin Weekend.

Don't waste time peeling! Roasting halved pumpkin or squash saves time and brings out a beautiful, caramelized flavour.

Ingredients:

· 1 small pumpkin or squash (approx. 1.2Kg)
· 1 tbsp oil

Unused hummus at the end of an event led to a game-changing hack:

3-INGREDIENT HUMMUS SCONES!

Soft, savoury, saving waste.

200g hummus
80g plain flour
1 heaped tsp baking powder

- Mix ingredients.
- Form a thick sausage & cut into rounds.
- 200°C fan (Gas 6) for 12 mins.
- Butter & eat 😋

🍏🍎Numerous traditional varieties picked by volunteers are making their way to the community- sharp flavoursome cookers for shared community puddings, lunchbox sized eaters for families ... Whoever planted this orchard years ago included something for everyone. What a great legacy 💚
