It is a cold and damp Irish winter, and I need comfort food on days like this. I cook a lot, but tomato bisque is not one of my staples. It is now - the best tomato soup or bisque I have ever had! So, what elevated the whole dish was roasting the onions and garlic beforehand. The result is sublime.
