We featured Kaigan Brewery in our recent Japan Beer Times (no.63), and noted that their taproom at the brewery near the beach was set to open soon. Well, it’s open now and you should definitely take a trip out to the Chiba coast to enjoy the great beaches, great people, and of course the great beer!

Good things come in twos so we introduced two luminaries of our industry: Sake Samurai and Kome Collective president Monica Samuels, and esteemed Singaporean sommelier Joshua Kalinan. Daimon’s Marcus Consolini pens an article on Japan’s rice crisis, and as usual we have a great recipe for pairing.
Our brewery features covered Niigata’s Ishimoto Shuzo (Koshi no Kanbai sake) and Shiga’s Kita Shuzo (Kirakucho sake), while we gave attention to two special sake spots as well, Tokyo’s WASAKE and Seattle’s Hannyatou.
Our recent issue of Sake Today showcased Kagoshima and Miyazaki, two prefectures better known for shochu than sake (there are a handful of breweries). For our travel special we focused on the exotic islands of Yakushima and Amami Oshima, as well as Kagoshima City, capital of the “Shochu Kingdom”.
Goodbeer Faucets in Shibuya is a classy bar with a great selection of domestic and import draft, including Australian craft beer! Food pairing, from snacks to main courses, is also a big part of the experience. They’re currently hiring (event manager, food manager, etc). Check their IG for details.

As the bar owner of Yellow Ape Craft (est 2012), he launched Ape Brewing in 2022. It has since been embraced by locals and visitors alike–definitely worth a visit in Osaka!
It’s not unusual for breweries to open a taproom or restaurant. But, in reverse, a bar or restaurant opening a brewery is unusual. As we reported in the recent Japan Beer Times, that’s exactly what Daikichi Kato did in Osaka.

ブルワリーがタップルームやレストランを開店するのは珍しくないが、バーやレストランがブルワリーを始めるのはあまりないケースだ。Japan Beer Timesの最新号で報じた通り、大阪の加藤大吉はまさにそのレアケースで、Yellow Ape Craft(2012年創業)のオーナーである彼が2022年にApe Brewingを立ち上げた。地元民にも観光客にも愛される、大阪に来たら立ち寄りたい店の一つだ。

Yeast is the backbone of flavor in beer, so if you’d like to try it out, GORA has been using it in a number of their beers, including Moon Lover, Gora Stout, and Such a Hazy Day. There are several varieties suited for different beer styles so if you’re an interested brewer, contact them directly.
Gora Brewery (Hakone), introduced in JBT59, is distributing WHC Lab yeast from Ireland. The yeast, apparently cultivated with input from brewers, is well-suited for high-temp fermentation and quick turnaround, offering ideal balance between its convenience and the quality of the resulting beer.

Japan Beer Times 59号で紹介した神奈川県・箱根のGORA BREWERYが、アイルランドのWHC Lab社のビール酵母の取り扱いを始めた。現場の声を反映して設計されたというこの酵母は、高温発酵や短納期にも対応しやすく、扱いやすさと仕上がりのバランスに優れているという。
Other attractions: head brewer Miyashita’s signature fried chicken, food trucks, limited-edition merchandise, brewery tours (first come, first serve), and a rock-paper-scissors contest with prizes. It’ll be a special day in the early summer of Yatsugatake, filled with great beer and good times.
A pre-party is also scheduled for Saturday, June 7. A variety of draft beers will be available, including the debut of their anniversary releases, ROCK Helles and ROCK Smoke Helles, as well as their signature Yatsugatake Beer Touchdown.
Yatsugatake Brewery’s anniversary festival is back again this year after a resounding response to its first iteration last year. The event will take place in front of their brewery's on-site restaurant, Moeginomura ROCK, on Sunday, June 8, 2025, from 10:00 AM to 4:00 PM.
