This makes 6-8 good servings, but if you cannot handle eating beans all week, let them cool in the pot, put them in containers, and freeze in serving-size portions. Serve with rice, crackers, pasta, cornbread, or any sort of carbohydrate to make a complete protein. Got some cheese? Great toss it on.
Cover and bring to a boil, then reduce to a simmer and cook until the beans are tender and just starting to fall apart 2-4 hours depending on your beans and pre-soaking time. Add more liquid to keep the beans covered while cooking. Taste and adjust for seasonings and salt here. Pull out any bones.
Add the beans back to the pot and cover +2” with stock, water, bouillon, whatever you have on hand. Add seasonings. Sage, parsley, thyme, garlic powder, onion powder, pepper, chili flakes, whatever you have and like. **The critical step here is to add 1/2 teaspoon of baking soda per pound of beans**
Once the vegetables are cooked down, add any meat you want, or none at all, and it doesn't need to be much. A turkey wing is excellent, if you can swing it. A ham bone is traditional—anything umami. One single sausage languishing in the freezer? Great, chuck it in.
Cut up and sautee any or all of the following: carrots, onion, celery, garlic (as much as you like and have). If you don’t have any vegetables, no problem - add some dry seasonings later. If you have any tomato product, add it if you like it.
Here is how I make mine (your recipe may vary):

Rinse, soak, and sort 1 pound of dry pinto beans.

Add some fat to a large pot. This can be any fat. It is there to provide flavor, so if you are using a neutral oil, you may need more seasonings—2ish Tablespoons.

Yeah, there is a lot that could go great in that change, but there is also a lot that could be really crappy in that change. I wouldn’t want to invest like that until I knew how everything was going to shake out.

Although neither application of polite request stopped the teenage boy from climbing our HVAC unit into and out of his bedroom or throwing used condoms out his window into our flowerbeds.
For that issue, we sparingly deployed the gentle “shut the fuck up” broomstick ✨tap✨on the ceiling. Between that and the white noise machine, it made it livable.
