While rare, some manymaw live a life without marking anyone, as there are certain plants that contain this soul energy. Although this soul doesn't replenish like prey, so get eating!

The soul of willing prey naturally replenishs over time, for as long as they want to remain a part of the manymaw. Unwilling soul will diminish over time until they are expelled due to being more costly to hold then its worth. (bar a few very rare occasions)

This soul is what manymaw need to satiate their hunger, although they do enjoy regular food in excess ;3

Upon being consumed, the soul of the victim is absorbed. The marking primes them for this!
The more soul inside a many maw, the fatter they are (size pre mutation also comes into play dw)

Oops more ideas

While most people fear the manymaws, the majority (but not all...) go after (mostly) willing prey!
This is due to the concept of soul. Each individual has soul! This soul is what makes you you. I wont go into the specifics rn but soul commonly gets partially split and reforms

At least one maw will form where the initial mark was! The mark itself will resemble a closed toothy mouth, with the design opening with no visible tounge when your ripe for eating, or with a visible tounge if your gonna be mutated...

Mightt call the species the "ManyMaw" or something silly

With the mark of the ravenous if he's partially fond of you, you can be mutated into a fellow monster. (not sure if i wanna keep the gluttony demon aspect, or something different... Maybe a unique species? :333 ofc you can pic and choose what freaky aspects ya want with one major exception).
