If you wanted to sign up with a different homeserver, you would simply click on "Edit" next to matrix.org in the element client when asked to create an account/log in, and enter the url of the homeserver you want to sign up with, and click continue. In most cases you'll be met with a regis[...]

Assuming you chose to proceed with email, from there it's pretty much the same as signing up for any old site. you enter an email and password, confirm it, prove you're not a robot, agree to terms, and click continue. You may or may not have to confirm your email, and then you should be ab[...]

From there, when you click "Continue", it should open a web browser, where you'll be prompted to enter a username. You can then choose to either create your account with an email address, or authenticate via one of the supported sites.

Once you've clicked on "Create account", you're presented with this screen. This will allow you to change the server you want to sign up with. If there's a specific server from the homeserver list you want to sign up with instead of matrix, here's where you can type in one of those URLs. O[...]
