I like to think that when he was in Italy 🇮🇹 his name was too hard to pronounce/remember, so the people he met simplified it and he's been JOE ever since 🐯 (July 2021)

First panel is a view of Piazza dei Signori in Treviso, Italy. The Council building and a restaurant in the plaza.
Second panel is a close up of Kojiro in his chef attire, sparkling and smiling as he says in Italian "Piacere! Sono Nanjo Kojiro, il nuovo aiuto cuoco!" which translates "Hello! I'm Nanjo Kojiro, the new assistant chef!"
In the third panel we can se the main chef vigorously patting Kojiro on his shoulder as he thinks "NanJO, KoJirO..." and then exclaims in Italian "JOE! Benvenuto!" (Joe, welcome!) as Kojiro thinks "Joe?" the chef goes on in Italian "Ragazzi! JOE è il nuovo aiuto cuoco!" (Guys! JOE is the new assistant chef!" with baloons from the other staff members greetings "Ciao Joe!"
Last panel is set in Okinawa, as we see Kaoru laying on the tatami floor, looking into macbook laptop, video callking Kojiro who is explaining "...and so yeah, I'm Joe now!" "I quite like it, sounds cool..."
Kaoru replies "I see...Joe." while thinking "sounds cool indeed, but there's no way I'll tell him. He instead replies "...sounds dumb to me!" and Kojiro shouts from the laptop "HEY! YOU ARE THE DUMB ONE, FOUR EYES!"

Kojiro Nanjo and Kaoru Sakurayashiki from SK8 the Infinity anime. Reference is episode 6, the beach episode. They are both in suimsuit. Kojiro is bathed in the sun and is smiling at Kaoru while blushing slightly. Kaoru is under the sun umbrella shade, arms crossed, pouting at Kojiro. He has his hair in a high but loose ponytail, he has bar piercings on his nipples and his navel, and he is wearing his Carla bracelet. His swim boxers are black. I love the hc that he still has piercings, but they are now in places he can hide with his clothes.
