Italian lemon herb chicken and lobster tail on the grill. Served over fresh pesto-tossed pasta. Roasted garlic simmered in clarified butter on the side, naturally. Meats roasted over a mix of mesquite charcoal and oak.

Fresh pesto made with fresh picked basil. Pine nuts and garlic roasted in lamb fat. Fresh pressed lemon juice. Grated parmigiano.

The chicken and lobster over the flame. Roasting on a mix of mesquite charcoal and oak. Chicken was marinated in lemon zest, lemon juice, fresh rosemary and sage. Fresh cracked pepper. The lobster tail got only a small bit of lemon, hoping to preserve the fresh seafood flavor.

The pesto has been tossed with the pasta, and the roasted garlic clarified butter to dip in. A little extra parmigiano on the chicken. Fresh cracked pepper. Some of the garlic and butter has been placed on slices of Italian bread, and baked in the oven.

A dense authentic Louisiana roux made by slow-simmering fats and flour for over 3 hours, prepared in a cast iron skillet

The "Cajun Trinity" mirepoix of onion, celery, and green peppers with the addition of a small bit of Belgian endive. On the herb plate is fresh-picked thyme, sage, and a small bit of rosemary.

The assembled previous items, with chicken and okra added. This will go on to simmer throughout the night at an extremely low temperature.
