Vash is still observant, suspicious and quick to get physical yet choose to believe in people,
Knives is still emotional and dangerously curious and wants to be of help.
And they can have you completely fooled together with the other characters that gives you their perspectives of their personas

I love in Trigun that reading the chapters of Vash and Knives childhood it's soo easy to say they changed personalities but then you actually look at the characters actions and it gets clear that no, they haven't changed at all, they have just successfully tricked you with their personas

I do think Eriks is more genuine though, more morose and less theatrical. Rem in Vash's dream says it too I think, that Vash has always been so serious (I might remember the exact words incorrectly). Which is obviously in Vash's head, but could be something Rem has said.

I think that is true, to a point. I think he was - as Eriks - at his lowest point mentally. I don't think he saw being a plant as a negative before fifth moon, more like a neutral. At this point he thinks of himself as intristically monstrous. That's gonna change how much he dares get involved.
