Loving the vibrant beauty of this red kale!

#DYK that the reddish-purple colour is due to the presence of anthocyanins? These pigments are known to have antioxidant and anti-inflammatory effects.

It's gorgeous now, but just wait until fall - cooler temperatures intensify these hues 🤩
These collards are the whole package - sturdy, large, robust leaves, packed with nutrition just begging to be eaten!

An excellent source of Vitamins K, A & C, they have good amounts of protein and calcium too! Talk about plant power 💪

For those who haven't tried it before: it can be eaten raw, but unless you REALLY love bitter, it's best mixed with milder tasting greens like lettuce, chard, or spinach to keep it in balance.  Cooking also mellows out the bitterness, and it's a great choice in soups or sauteed. 3/4
Often overlooked as food for humans, dandelion is a bitter green with so many health benefits. Its high potassium content makes it particularly useful as a mild diuretic. 2/4

Those will be the first crops to be ready.  We also plant lettuce from seed, so other lettuces begin their journey right in the field.  We do our best to time growth cycles so that by the time one batch is finished, another is good to go. Steady supply is our goal! 2/3
Some of our lettuces begin their journey with a head start in a warm and humid greenhouse in early spring. When the time is right, the tiny seedlings get transplanted into our fields where they can spread out in the great outdoors, rooted in healthy soil. 1/3

This heat wave has come at a crucial time for our beloved carrots, & we've been watching closely. The emerging plants are still in their infancy, & if the soil temp reaches a certain threshold, they will die. While unpleasant for us, the humidity helped keep the temp below this critical point. 2/3
