Definitely rushed it a bit with the rise because we wanted a loaf plto eat with some soup for supper but the flavour is great even if it's a little bit dense.
The soup is pinto beans with chipotle peppers in adobo, with cilantro, scallions and lime.

I've decided to make mole poblano (chicken) over the next two days for Xmas Eve, with tomato rice, frijoles de la olla, and escabeche.
Fortunately I have my brother as sous chef to split the load bc its gonna be a lot.

Some Thai green curry in progress. I'm making a bone broth with lemongrass and galangal to then braise the pork shoulder. Then I'll saute the curry paste in coconut cream and add that to the pork later along with some of the vegetables so it keeps a brighter green colour.
